Weighing and Grinding on the Fiorenzato F64 EVO Pro Sense

The Fiorenzato F64 EVO Pro Sense is a commercial espresso grinder that grinds on demand and doses by weight. The dose is set in grams, the fork's scale works to 0.1 g precision, and grinding ends once the basket reaches that weight. Grind by weight belongs on the main espresso grinder, where most of a bar's shots are pulled.

The fork itself is adjustable, with a support for the portafilter, and the floating scale is part of Fiorenzato's patented anti-jamming system, which the brand describes as shock-resistant and less affected by outside forces.

Master Mode, Direct Mode, and Dose Resume

Direct Mode leaves each start to the barista. In Master Mode, the grinder identifies a saved portafilter from its weight alone, then starts the matching single or double shot automatically, ready for the espresso machine. If the portafilter is pulled away early, Dose Resume keeps what has already been ground in memory for 5 seconds so the dose can be finished.

An IPS touchscreen shows the date and time, dose and grinding settings for single, double, triple, and manual doses, the grinding mode, and dose stats by day, by week, and in total.

PRO Chamber and EVO Technology

Fiorenzato's PRO technology is a quick-release grinding chamber. Two levers on the sides free it, so the burrs can be cleaned without removing the grind adjustment ring, and the burr distance stays where it was set, which makes regular maintenance quicker. Fiorenzato puts the retention saving from the PRO chamber at up to 50% against its standard models, and its EVO technology is designed to keep motor heat in check.

64 mm Flat Burrs With Dark-T Coating

The flat 64 mm burrs are made by Fiorenzato in M340 steel and finished with Dark-T coating. Fiorenzato rates standard burrs for 600 kg of coffee beans and the coated burrs for 3,000 kg, and it lists an output of 2.7 g/s with Dark-T burrs.
